Recipe Corner: London Slices by British Ambassador and his wife

Pastry base:

380g Flour

5 Egg yolks

250g Soft  butter

150g Icing sugar

2 (tsp) baking powder

 Middle layer:   

Jam of your choice - apricot, red current or even plum if you are putting walnuts on top

7 Egg whites

250g Caster sugar

250g Ground walnuts or shredded coconut

Mix the above ingredients by hand to make a pastry, roll out between 2 sheets of baking paper. Bake on 160 C with fan for 10-15 minutes. Rest for a while then spread generously with jam. 

Beat the egg whites until firm, gradually add sugar, then walnuts or coconut. Top the cake with the walnut or coconut topping. Bake for another 15 minutes.
