Recipe Corner: Eggplant Rice

Peel 3 eggplants, cut them into 2 slices each, put them in a mixture of water and salt for half an hour to take away the bitterness. Also, this prevents them from absorbing too much oil when fried.

After half an hour, dry them and fry them in a pan with vegetable oil. Then leave them on a sieve or colander to get rid of some of the extra oil.

Sautee one big onion and add it to half a kilo of minced beef and let it fry for half an hour. Add a big chopped tomato, one spoon of tomato paste and any spices you like.

Rinse 4 cups of rice. Boil 6 cups of water and add rice into it. When the rice and water start boiling, pour the rice and water into a colander in the sink. In one pot, pour some oil and add a layer of the rice on the bottom of the pot. Put the meat on top of the rice, add the eggplants and add the rest of the rice on top. Leave on the cooker for another half an hour and it is ready.
